Our October special takes inspiration from the kebab karaz of Aleppo and Antep. A guinea fowl supreme is marinated in sour cherry harissa, grape molasses and allspice, then chargrilled over fire. It arrives on whipped gigantes bean skordalia with toum, finished with a rich sour cherry sauce and fresh chives.
